Slice them fairly thinly, chop garlic and parsley (as much as you like!), and arm yourself with tomato puree and olive oil. Heat a pan with lid for a little while, then bung the courgettes in, put the lid on and give them a good shake. Add a splash of oil, a couple of squirts of tom puree and the garlic and give it another vigorous shake. Finally add the parsley and shake again.
